Liven up pancake batter with fresh lemon

Keep a fresh lemon on hand and pop it whole in the freezer. The next time you whip up some pancake batter, zest some of the frozen lemon into the batter; then add a tablespoon of vanilla. Your pancakes will be fresh and tasty- restaurant quality. Use the lemon until  the peelings are all removed, at least 3-4 uses.  Enjoy!
